One thing I’ve realised since taking on a more healthy lifestyle is that good food doesn’t have to be boring!
Here’s how to cook one of my new faves: Beef and Halloumi burgers and sweet potato fries – yep all healthy and all on my Juiceplus plan!
2-4 Beef burgers (we used gluten free but you can use any of your choice)
1 big tomato
1 pack of Halloumi
2 big sweet potatoes
Note: you can choose your quantity of single or double per person.
Sweet potato fries
– Chop the sweet potatoes into chip size chunks
– Throw the chips into a bowl and marinate with olive oil and paprika
– Place on an oven tray and cook in the oven on 225c for approx. 15-20 minutes.
– Start by chopping some onion and squashing small pieces into the burger for extra flavour. Remould if needed
– Chop the tomato, avocado and Halloumi into slices.
10 minutes in…
– pop the burgers into a pan and fry with coconut oil
– In the last few minutes add Halloumi into a pan to cook
If timed correctly all should be finished at the same time.
Layer the contents onto a skewer and add the sweet potato fries at the side.
Here’s one of Liam and I’s most recent healthy dinners. Its all approved on our Juiceplus meal plan and has got to be up there with my top 3 so far – I’m loving the tomato based sauces at the mo!
This will feed 2-3…dependant on how greedy you are :o)
What you’ll need:
Salt and pepper
How you’ll do it:
Preheat the pan and grease in coconut oil while you chop away at everything that needs to be chopped
Add the onions and meatballs in the pan to start cooking, adding the garlic and cabbage a few minutes after.
Once the meatballs are brown, add all things tomatoey and the Worchester sauce into the pan.
Let it cook for a bit longer, giving it a good old stir along the way
Add your cheese and leave to melt.
Serve in the pan while piping hot..bon appetit!
The following recipe is completely JuicePlus approved too 😊
2x chicken breasts
Chop and season the chicken..
If you’re using fresh peppers and onions, chop them too (I used frozen)
Pop the veg and olive oil into a pan
Pop your rice in a separate pan to boil – I used Uncle bens 10 minute pouch but you could also get the microwaveable version too
Add the chicken..
Put 8-10 tomatoes into a blender with some salt and pepper and blend
Once the chicken looks white, add the home made purée ..
Leave to simmer for a further few minutes.
As the purée is quite runny, drain it from the contents and place into a separate jug..
Add the rice in with the chicken and veg then add the purée to find your desired consistency..
Pop into a bowl and eat!
Ingredients for 3 people (or 2 nd make lunch for the next day!)
– 1 pack of Turkey mince or slices
– 1 onion
– mozzarella or feta cheese (you choose)
– 1 can of chopped tomatoes
– 3 large peppers (colour of your choice)
– Tomato Purée
Chop the onions and throw them into a preheated pan with the turkey ..
In the meantime
Chop the peppers in half and carve out the middle.
Add the tinned tomatoes once the chicken starts to turn golden brown..
And some herbs..
Leave to simmer for 5 mins ..
Is the chicken fully cooked? Remember salmonella Is not your friend.
Check by taking a small piece out of the pan to try.
Stuff the peppers with the filling, and add the cheese on top
Pop them in the oven for a few minutes so the cheese melts and the peppers soften.
No I’m not colorblind..I love these so much I’ve made them twice now, with different colour peppers.
For an added pazaaz, you can throw some basmati rice on the plate too if you wish.
The world is your pepper
Here’s another recipe from my #tastyin20 menu. A meal that can be started and ready to eat in or less than 20 minutes!
(serves 2 large portions)
1/2 pack of fine egg noodles
1 small box of beef strips
1 red pepper
1 Blue Dragon black bean stir fry sauce
+ optional seasonings of your choice
How to cook
Put a saucepan of water on the hob to boil
Season the beef strips
Throw the beef strips into a pan with a splash of olive oil for 8-10 minutes
Chop the pepper and onion while you wait (try not to cry!)
Add the black bean sauce when youve finished chopping the veg, stir and leave to simmer
Throw the fine egg noodles into boil (these only take 3-4 minutes)
Add the veg and stir altogether for a couple of minutes Check that the noodles are cooked, then mix well into the stir fry
Serve and enjoy!
One of the main downsides of working in the city or the West End of London is definitely the extortionate food prices. I mean £6 for a salad really? Don’t get me wrong it is all about quality and freshness, but for a few green leaves and some special healthy beans it’s a bit ridiculous.
I try to prep lunches the night before sometimes to save the pennies, here’s one I made for today..
