Chicken and tomato stir fry

The following recipe is completely JuicePlus approved too ūüėä

  • 2x chicken breasts
  • Seasoning
  • Peppers
  • Onions
  • Tomatoes
  • Basmati rice

Chop and season the chicken..

If you’re using fresh peppers and onions, chop them too (I used frozen)

Pop the veg and olive oil into a pan

Pop your rice in a separate pan to boil – I used Uncle bens 10 minute pouch but you could also get the microwaveable version too

Add the chicken..

Put 8-10 tomatoes into a blender with some salt and pepper and blend

Once the chicken looks white, add the home made purée ..

Leave to simmer for a further few minutes.

As the purée is quite runny, drain it from the contents and place into a separate jug..

Add the rice in with the chicken and veg then add the purée to find your desired consistency..

Pop into a bowl and eat!

#tastyin20:Stuffed Turkey Peppers

Ingredients for 3 people (or 2 nd make lunch for the next day!)

 – 1 pack of Turkey mince or slices

– 1 onion

– mozzarella or feta cheese (you choose)

– 1 can of chopped tomatoes

– 3 large peppers (colour of your choice)

– Tomato Pur√©e

– Herbs

Chop the onions and throw them into a preheated pan with the turkey ..

In the meantime
Chop the peppers in half and carve out the middle.
Add the tinned tomatoes once the chicken starts to turn golden brown..

And some herbs..

Leave to simmer for 5 mins ..

Is the chicken fully cooked? Remember salmonella Is not your friend.

Check by taking a small piece out of the pan to try.

Stuff the peppers with the filling, and add the cheese on top

Pop them in the oven for a few minutes so the cheese melts and the peppers soften.

Voila !

No I’m not colorblind..I love these so much I’ve made them twice now, with different colour peppers.

For an added pazaaz, you can throw some basmati rice on the plate too if you wish.

The world is your pepper

5 metabolism boosting snacks

Oh snacking..I love to snack! Did you know that eating more can actually help you to lose weight?

The biggest mistake people make in what they eat is not necessarily their dinners, most of the time it’s what they eat in between to cure those hunger pangs!

Here’s 5 super filling, healthy, nutritious snacks to keep your metabolism working all day.

  Pita bread and hummus

Wholemeal pittas with hummus are a great snack when you’re feeling tired. You’ve got your slow releasing carbs and hummus which is a good source of fat. Switch your afternoon chocolate bar for this and you will feel so much better.

Yes I said it right, popcorn is a healthy snack! Ok not the ones that you get in the paper bag in cinema filled with sugar and salt, but the ones that you can buy and microwave at home..ass some cinnamon for some added extra flavour

  Greek Yoghurt

Packs nearly twice as much protein as dairy products, and tastes lovely! You can add this in fruit

  Citrus fruits
Foods like oranges, grapefruit, lemons and limes contain vitamin C that helps metabolize fat faster. You only need 60 milligrams (mg) of vitamin C a day to meet your body’s basic needs, but increasing your daily intake to 500 mg can boost your fat-burning potential during exercise by 39%.

  Rice Cakes

For a very filling afternoon snack, spread some almond butter, a banana or some tuna and cucumber on one or two rices cakes to keep you full all the way up to dinner!

What is JuicePlus+?

Happy Sunday everyone!

As most of you know, I have recently become a JuicePlus+ rep. I have had a lot of interest and the first, most obvious question that arises is.. What is Juice Plus+??

So here is my lowdown on all things juicy, why it is great to make this healthy lifestyle change and how you can contact me if you are interested in joining the revolution!

Juice Plus+ is whole food based nutrition, including juice powder concentrates from 30 different fruits, vegetables and grains. Healthy living with Juice Plus+ helps bridge the gap between what you should eat and what you do eat every day. It is not a multivitamin, medicine, treatment or cure for any disease (though its been proven by real men and women to improve lots of symptoms).

JuicePlus+ Shakes

All the products are made from quality ingredients, carefully monitored from farm to capsule and shake to provide natural nutrients your body needs to be at its best.

Why do I need JUICE PLUS+?

Everyone wants to eat right and maintain a healthier lifestyle right? Whether you’re a busy mum hustling to feed on-the-go children, a business traveller trying to stay fit, or an active boomer keeping up with grandkids. Unfortunately, maintaining a balanced nutritional diet is often a challenge. In simplest terms, healthy eating is about getting back to basics ‚ąí by following the latest USDA guidelines.

The best way to reduce your risk of disease is to eat healthy. The right fuel in your body makes it run better. Fruits and vegetables are two key food groups known to contribute to better health. Juice Plus+ puts more of the valuable nutrition from fruits and vegetables back into your diet to improve health and wellness.

The current recommendation for a healthy diet is to fill half your plate at each meal with fruits and vegetables, but how many of us actually do that on a daily basis?

Fruit, Veg and Berry Capsules

Healthy eating takes time, planning, and can cost a lot of money, which is why most people opt for easier and unhealthy processed food options. As a result, most of us suffer from a daily fruit and vegetable consumption gap. Rich in vitamins and antioxidants, Juice Plus+ products can help you fill that hole in your diet. There are even chewable vitamins available for children!

JuicePlus+ Benefits?

You are what you eat..

I’ve always wondered what that actually meant. Sounds a bit strange doesnt it?

It’s not until I have gotten older and cared more about what I look and feel like that I¬†finally understand what this phrase means!

Your body, emotions, health, fitness and appearance are literally a bi-product of what you eat.

Eat crap = feel crap. Simple

Living with Arthur

Arthur can be very aggressive, when his angry he inflicts lots of pain
On lucky days I can avoid him
But eventually he torments again

At 19, Arthur forced me to cut off my hair
and he caused me unbelievable stress
He sometimes limits me from exercise too
so I struggle to look my best

He has made me feel tired and frustrated
heartbroken and very alone
He steals all of my energy and some days
its too much effort to even leave my home

I get support from my family and friends
but theyll never fully know
How it feels to live with someone you despise
but someone you cannot let go

Some days I wake up with new hope
And some days I wake up with none
Sometimes I know I’ll have a terrible day
before the day has even begun

I often try to set goals for myself
but Arthur gets in the way
Even the simplest of tasks are hard
when his there to ruin my day

I often wonder and think to myself
Why was it me he chose to be with?
Then I remember not to take pity on myself
As there are far worse lives I could live

Happy 5th Anniversary to us Arthur,
were finally learning to get along.
I’m stuck with you but at least I’m fighting back
You taught me that to succeed in life you must be strong.

An insight into chronic illness from yours truly

Joining the Revolution

Ok so everyone goes on about how you have to travel, it’s the best thing you’ll ever do etc. And of course now I’ve done it I totally agree! Travelling makes you richer in mind and spirit, BUT I’m writing this post to tell you what else it makes you..
Travelling makes you FAT.

That’s right, this whole ‘oh you’ll get so skinny travelling’ ‘you’ll sweat out all the fat’ ‘you’ll do lots of walking’ bla bla bla. All lies.
So here are my reasons to back up my extra stone of weight I’ve put on in the last 4 months.

1.Beer is cheaper than water in most of Asia.

With beers at 50 cents in many a places and the lower calorie vodka and tonic option clocking in around $4 a piece, it’s a no brainer which one you’ll choose.

Drunk = 4 vodkas = $16

Drunk = 8 beers = $4

2. You eat street food at least 5 times a day

Were here to blend in and live like a local right? Part of that is experimenting the cuisine, and street food is the best way to do it. Dishes are 3x cheaper than restaurants but they’re also smaller and make you want to eat more often. Everything is also fried and 8/10 of them include rice or noodles. I can’t imagine any of that benefiting your waistline.

3. Exercise smexercise

Get used to it, the main sport you’ll be playing is beer pong.

Not everyone is nuts like me and wants to trek 10km for no reason, especially when you’re hungover.

Tuk Tuk journeys are $2 or less, making the lazier option a lot more popular.

So enough talking, what’s all this joining the revolution about?

In a bid to get sexy I’ve joined juice plus! So over the next few weeks expect posts of me and my shakes and lots of healthy recipes to follow.

If you want to know more info about this healthy living formula (it’s not a fad diet!) And join me in my bid to #getsexy, email me at for a lowdown of how it all works.

Travel packing: carry on luggage

Ok so here’s a post I wrote a few days back, and thought I posted when I was on the way to the airport, however it was left in my drafts. My bad. So here it is a few days late but hopefully it’ll help some of my fellow travellers out.

So you’ve all seen what I attempted to squeeze into my big backpack from my packing tests. In the end I decided to ditch another packing cube and go for 2 vacuum bags as it seemed easier.

Now here is my carry on luggage for the airport:

Here’s what was inside for my 11 hour flight:

Super important stuff

1. Orange folder of V.I.P documents including hotel and flight confirmation, extra passport photos, vaccination, insurance and medication records, 2x photocopies of my passport.

2. Secret travel pouch containing Thai baht, dollars, my passport and 3 debit/credit cards

3. Card reader: for easy moving of money between accounts. (Nationwide has free foreign transaction so I would highly recommend them)

4. All important medication that you can’t afford to lose if your luggage goes missing

Health & Hygiene

1. Face wipes: because planes are full of disease and makes me feel dirty, so these are to freshen up upon landing

2. Throat lozenges: to immunise me from all the coughing and spluttering on the plane and to also suck on when my ears hurt so much that I feel like my head will explode because of the pressure

3. Neurofen: headaches are not enjoyable

4. Toothbrush: after hours of travel, plane food and ‘morningbreath, this is a must. You won’t make any friends on your travels if your breath smells.

5. Collapsible bottle: fill this up when you’re through customs so you don’t have to wait for someone to come around with a trolley to stay hydrated. You also save on paying extortionate prices for a basic necessity

6. Bronzer: because I don’t want to scare people when I get off the plane, and I don’t have a tan yet

7. Hairbrush: to tame the wild mane

The famous ‘under 100ml plastic airport bag’ liquids

Left to right: Perfume, mosquito spray with 50% DEET, anti-bac hand gel, mascara, concealer, paw-paw ointment (aka magic cream), factor 30 (to apply when wait for my case), chap stick, toothpaste, roll on deodorant

Entertainment and/or valuables

1. Selfie stick: aeroplane & airport selfies obvs

2. Sunglasses & normal glasses

3. Underwater camera and memory cards in case

4. iPod and headphones: music and films yay

5. Rechargeable battery: because Apple batteries are shite

6. Cables to charge them

So here’s my carry on – what are your carry on necessities?
