Mexican Stuffed Peppers

🌟Ingredients 🌟
4 large red and/or green bell peppers/capsicums

1 1/2 tsp olive oil, divided

3-400g extra-lean ground beef

1 cup finely chopped red onion

1/2 tsp ground cumin

1/2 tsp ground coriander

1/2 tsp sea salt

1/4 tsp chilli powder

3 cloves garlic, minced

1 can unsalted black or pinto beans, drained and rinsed

1 cup fresh or frozen corn kernels, thawed

2 tbsp organic unsalted tomato paste

2 tsp fresh lime juice

Chopped fresh cilantro leaves for garnish, optional
🌟Directions 🌟
💛Preheat oven to 200˚C. With a paring knife, carefully trim bottoms of peppers so they stand upright; do not cut through flesh. Slice off tops and remove and discard stems; finely chop tops and set aside.
❤️Carefully insert a paring knife into cavities of peppers and trim away seeds and membranes from insides. Wrap each pepper in foil and arrange upright in an 8-inch square baking dish. Bake until slightly softened, about 20 minutes. Remove from foil and set aside until cooled slightly. Reduce oven heat to 180˚C.

💚Meanwhile, in a medium nonstick pan, heat 1 tsp oil on medium. Add beef and sauté, breaking up with a wooden spoon, until cooked through, about 8 minutes. Remove beef from pan, cover and set aside; keep pan on medium heat.

💛To pan, add reserved chopped pepper tops, onion, cumin, coriander, salt and chilli powder. Sauté, stirring often, until softened, about 4 minutes. Add garlic and sauté for 1 more minute. Stir in beans, corn, tomato paste, lime juice and beef. Reduce heat to medium-low and cook, stirring, for 5 to 6 more minutes.

❤️Brush bottom of 8-inch square baking dish with remaining 1/2 tsp oil. Stand peppers cavity side up in dish. Spoon beef mixture into peppers, packing tightly. Cover with foil and bake until peppers are tender and filling is heated through, about 35 minutes.

Enjoy 😋

Clean Beef & Halloumi Burgers

One thing I’ve realised since taking on a more healthy lifestyle is that good food doesn’t have to be boring!

Here’s how to cook one of my new faves: Beef and Halloumi burgers and sweet potato fries – yep all healthy and all on my Juiceplus plan!

Ingredients:

  • 2-4 Beef burgers (we used gluten free but you can use any of your choice)
  • 1 onion
  • Avocado
  • 1 big tomato
  • 1 pack of Halloumi
  • 2 big sweet potatoes
  • Paprika
  • Olive oil

Note: you can choose your quantity of single or double per person.

Sweet potato fries

– Chop the sweet potatoes into chip size chunks

– Throw the chips into a bowl and marinate with olive oil and paprika

– Place on an oven tray and cook in the oven on 225c for approx. 15-20 minutes.

The burgers

– Start by chopping some onion and squashing small pieces into the burger for extra flavour. Remould if needed

– Chop the tomato, avocado and Halloumi into slices.

10 minutes in…

– pop the burgers into a pan and fry with coconut oil

– In the last few minutes add Halloumi into a pan to cook

If timed correctly all should be finished at the same time.

Layer the contents onto a skewer and add the sweet potato fries at the side.

Add the onions and meatballs in the pan to start cooking, adding the garlic and cabbage a few minutes after.

Once the meatballs are brown, add all things tomatoey and the Worchester sauce into the pan.

imageLet it cook for a bit longer, giving it a good old stir along the way

Add your cheese and leave to melt.

Serve in the pan while piping hot..bon appetit!

The Montagu @ Oxford Circus

For our one year anniversary last week Liam and I headed to The Montagu in Oxford Circus.

The lavish food is sourced from independent British farms and local award-winning suppliers. This means that while eating their beautifully presented and great tasting food, you can also feel very satisfied that you’ve helped many of our countries businesses. Winning!

As you walk through the revolving doors of this plush hotel, you are faced with a clean and modern, spacious setting and just to the left resides their impressive 4* restaurant.

Mood lighting to perfection, crystal chandeliers and a romantic ambience set the scene. Not to forget the live music – a pianist playing beautiful renditions of popular chart songs.

We went all in; as we were celebrating and all, with a 3 course meal and lots of wine.

Starter: Pea & Ham hock soup

Mains: Roast chicken with swede sauce & veg

Dessert: caramel ganache & popcorn ice cream

Quite possibly the best dessert I have ever had! (And that’s a big statement). I absolutely love caramel and the biscuit and popcorn ice cream complimented it perfectly.. I was so excited I almost forgot to take a picture!

All of our food tasted as good as it looked and the white wine went down a treat.

The real highlight for me was a front-row seat to observe the exhilarating, fast-paced life of a chef in the open plan kitchen!

The Montagu has menus for breakfast, lunch, traditional afternoon tea, dinner and weekend brunch. I would definitely recommend this place to anyone for a special occasion as its relatively priced for what you get and makes for a really enjoyable evening.

I’m pretty sure I’ll be taking up the weekend brunch offer soon too so watch this space!

Chicken and tomato stir fry

The following recipe is completely JuicePlus approved too 😊

Ingredients:

  • 2x chicken breasts
  • Seasoning
  • Peppers
  • Onions
  • Tomatoes
  • Basmati rice

Chop and season the chicken..

If you’re using fresh peppers and onions, chop them too (I used frozen)

Pop the veg and olive oil into a pan

Pop your rice in a separate pan to boil – I used Uncle bens 10 minute pouch but you could also get the microwaveable version too

Add the chicken..

Put 8-10 tomatoes into a blender with some salt and pepper and blend

Once the chicken looks white, add the home made purée ..

Leave to simmer for a further few minutes.

As the purée is quite runny, drain it from the contents and place into a separate jug..

Add the rice in with the chicken and veg then add the purée to find your desired consistency..

Pop into a bowl and eat!
