Simple Saturday Recipe: Veggie Omelette

Breakfast is the most important meal of the day! Never skip it as your metabolism doesn’t start properly until you eat in the morning.

Here’s a veggie omelette I whipped up this morning. Super healthy and a great start to the day. It takes about 10-15 minutes in total, depending on how much of an expert chopper you are..

Ingredients:

3 X eggs

Cherry tomatoes

Spinach

1/2 green pepper

Cheese

Milk

Preparation

cut tomatoes in half
throw the tomatoes & spinach in a bowl & microwave for 2 minutes to soften
Cut the pepper from the corners, cut them smaller and then throw away the core

Or you can plant the seeds in your garden, I wonder if that makes a pepper tree?

Add olive oil to the pan and pre heat.

Pop 3 eggs into a jug and add a dash of milk
Add salt & pepper and whisk
Grate the cheese

Cooking

Add tomatoes & spinach first, followed by the peppers
Then add the mixture
Pop under the grill for 2 minutes to cook the top
Voila!

Romeo done.
